30 minute noodle soup

I have an addiction to noodle soups.  They're just so easy and comforting, while still looking fancy as fuck.  So, today I didn't really feel like cooking at all, so I made this mushroom noodle soup.

Makes enough for two days for two hungry people
Ingredients:
1-2 chicken stock bouillon cubes
1 package of soba noodles
1 onion
1 small cardboard carton of shiitake mushrooms
1 small cardboard carton of oyster mushrooms
Green onion
Couple handfuls of spinach
Toppings:
2 bell peppers
4 pieces of celery
2 carrots cut into matchsticks
More green onion
Sriracha
Sesame seeds

Instruction:
Grab a saucepan and fill it with water.  When it gets to boiling- drop the cubes of stock in and stir.  While that's happening- boil a pot of water for your soba noodles.  Keep an eye on that pot.  When it boils- add the soba noodles and cook for 3 minutes.  Don't overcook.  Rinse them in cold water and colander out the water. While everything is getting ready to boil, you multitasker, you, chop up the onion and cook it until it's soft.  Grab some cheap white wine and add a slosh to the onion.  Drink some.  Cook the onion until golden.  Throw it into the soup- because you want it to absorb that onion flavor but also because who has time to put it in a separate dish?  Now, get another pan or clean this one and cook the mushrooms.  I like coconut oil for the mushrooms but olive works too.  Or vegetable oil if you're a peasant.  Now, cook the mushrooms until they're vaguely slimy and smell amazing.  Then cook a little past that, but don't let them burn.  Now, throw them into the soup.  Stir everything.  Add the ready noodles.  Grab your spinach and throw it in the boiling water.  Turn off heat and stir- you don't want to overcook the spinach.  Our goal is for everything to taste fresh.  Add some green onion!!!And now your soup base is done once you add some  toppings!



 Chop up all of the ingredients for toppings and add however much you want to your soup.  You have now created a fairly inexpensive and delicious soup that looks fancy and literally only took you maybe 30 minutes.
